Sanctum Scriptorium by Galen L.K. After reading this story I immediately went to Bluesky to post that GIF of someone writing with fire, because I think this is such a strong start to the anthology. The story is about a monk living in a monastery in what is now Austria around the 15th century. When the nearby city of Salzburg is taken over by a rebellion, the monk finds a half-dead rebel outside the monastery and secretly takes him in to heal his wounds.
